So tonight was a bit of a gamble with my dinner choice.
I decided to make a veggie pizza. Though it wasn't a very traditional pizza, it was what I had in the fridge and I was committed to making it work.
Here is what I planned on using. But I didn't end up using the BBQ because the pasta sauce was SOOOO good that I didn't need it.
Now these little pizza crusts were tricky . . .
For one- I had no idea if they were raw or cooked. Reminder- I'm totally new at this cooking thing! I'm sure someone that has 1/2 a brain could have figured it out, but I really wasn't sure.
Secondly- they didn't come with any cooking instructions (remember- I'm in Thailand!). So I had to totally guess on temp and time.
And thirdly, if you would take the time to actually "click" on this photo below (it will open up as a big picture), you will notice an interesting red dot in the middle of it.
This red dot was actually a squished dead ant that had spent his last days pressed between two, either cooked or raw, pizza crusts. (again- reminder that I live and buy groceries in Thailand and their quality control process leaves a little something to be desired).
Thankfully I had more than just one pizza crust and was able to toss this one.
So I generously spread on the sauce because I like a saucy pizza! And I decided that if I was going to go to the trouble of cooking one mini pizza, I might as well cook 2.
Then, because I had it in the fridge, I added this big piece of Kale to each pizza. Now, I'm not totally sure that this is actual Kale. I say that because I bought this for (a few posts back) making Kale Chips. But I quickly realized that my Kale (purchased in Thailand) and my friends Kale (purchased in the US of A) were totally different.
But nevertheless, I thought the colors looked good and I put it on the pizza.
What's a pizza without cheese? Well I only had 2 choices of cheese in the fridge (I wasn't prepared to make a pizza) - Laughing Cow Wedges or Kraft Singles.
Typically, we don't even buy cheese because it's a little on the expensive side. But there was a very particular week this month in which I knew if I didn't have cheese on hand that someone was bound to get hurt. Very Hurt.
So I broke down and bought some cheese.
Then for the heartiness I added Red Kidney beans. They aren't my favorite bean, but I have yet to find canned black beans here. So Red kidney it was.
I found a little diagram on my Toaster Oven that suggested I put my pizza in for 40 minutes at 190 Celsius. So I went ahead and did that. But I thought it wise to come back in about 10 minutes to check, since I still wasn't sure if this crust was cooked or raw.
I'm very thankful I did because 10 minutes seemed to be Perfect and my crust was already turning a beautiful golden brown!
Funny new thing I learned- when beans get hot, they start to split and open! I opened the Toaster Oven to peek inside and the beans started slowly opening, as if they had a quiet little secret they wanted to share with me. At first it freaked me out and I started to question what was really in that bean can! But then I noticed when I shut the oven, they slowly started to close again. Interesting indeed!
So it all turned out for the good and my pizza turned out to be around 430 calories. I had to guess on the crust, but I thought 180 was a pretty decent estimate.
On a side note. While in the office today, we were planning our next week and where we will go each day to handout and collect jewelry. We were all looking at the calendar when a light bulb went off and Anne exclaimed- Jen will be here next week!!!
Then we all had a little happy dance :)
