Random October File

I haven't updated the blog in quite some time!!  That is mainly because Jen and I are in a bit of a place of "hold" right now.  I'm not going to get into that on this blog post, but if you get our newsletters, you should have seen something about it at the bottom  ;)

But we have been busy doing lots of random things, and that is what this blog post is about.  Here are pictures from my "random" picture folder from the month of October.

 Cooking- this is something we've been doing a LOT of lately.  Since we are trying to lose a little weight and also just become more healthy overall, we've been cooking about 90% of our meals.  
Our latest and so far most favorite were these Stacked Roasted Veggie Enchiladas!!  SO amazing!

We've had our share of the flooding here in Chiang Mai, but it was nothing compared to Bangkok (which is still flooded in 70% of the city)


Missing Halloween was a bit sad for me.  No, I dont celebrate dead people, but I do enjoy watching little kids get dressed up (and maybe myself, but I'll never tell!) and enjoying a night of Free Candy!!  Also I love the weather and the candy half off sales after the 31st!  
So, in an effort to bring some Halloween to Thailand, Jen made homemade pudding (low fat of course!) and we crumbled "dirt" (oreos) on top and buried the only Halloween candy we could find here- a jelly skeleton - into it!  It was so yummm!!


Baw got baptized!!  If you remember, she was a young girl we met last year doing the jewelry project and then also interned with us over the summer.  She has since become a strong believer and is discipling other girls as well as being discipled 


We celebrated Dee's bday at the coffee shop.  Jen made our 'famous' whole-wheat banana chocolate chip bread  =)  Man, we love Dee!!!  I wish everyone could have a "Dee" in their lives!


Jen had to pose for some photos for the government.  To get her visa stuff, they need tons of pics of all the things she does- including working in the office.  This isn't her computer or her desk or her office, but it gets the point across  ;)


We also had to create a sign just for these government photos and go put it on Anne's side house, where we have the office registered from before.  We had to actually get that sign made just for this one photo because the government said we had to have a sign on our office and they needed a picture of it.  Yeah, just for Jen's visa!!  So crazy!


Jen got poo'd on!!!  Hehehehe!  She has no clue how long she was walking around with this before she discovered it!


Another favorite meal we've had (the pic does not do it justice).  It was a mango sauce over pork tenderloin, homemade garlic mashed potatoes & brown sugar carrots!  I could have eaten my weight in that stuff!


We are working on some jewelry orders and also new jewelry for BTN to have.  This is something we're currently working on- it's a wrapped bracelet.  We're planning on doing it all 1 color, but just wanted to see all the different colors without having to make 3 different full samples.  However, I'm really diggin' the multicolor thing happening! 


We have finally faced our fear, and cooked with Real pumpkin!!  We have been looking for canned pumpkin for weeks now at every store we can think of, and no one has it here.  We have been so intimidated by the thought of using a real pumpkin that we almost gave up.  
Then we talked to a friend that said, stick it in a tinfoil bag you make around it and bake it for an hour or so.  That's it!!
And we did!  And since then, we made some amazing pumpkin muffins & I looked up how to make your very own Pumpkin Spice for coffee (Starbucks in Thailand does not serve the ever highly anticipated holiday drinks like they do back home & there is much left to be desired when I see everyone posting on FB about the beauty and warmth these drinks are bringing them!)
So I decided to create my own, and not only is it de'lish, it's also healthy!  No fake syrups for me!  :)

We are still in the workings of getting the orphanage started and Anne is meeting with the government again on Monday . . .   hopefully we'll get some update then.

We are still working on jewelry and orders and new designs.

We still have the awesome Java Junkie coffee shop & I'm working on a new menu for this high season that we're coming into.

And we're still Jen and Steph, awesome as always!!   =)
