Food Blog, Use whatcha got

With Jen gone, I am continually forced to fend for myself and make sure I don't starve to death. This is a never ending task, day after day, that I don't exactly look forward to.

So I've decided, by influence of reading food blogs, to try and make more exciting meals for myself, experiment a little more and also share all of that with you-- my mom. I mean faithful readers.

So tonight I decided to make a little something I like to call, Use whatcha got. I particularly love this dish because it's so versatile! You can do practically anything with it- the possibilities are endless! (I know what you're asking yourselves- can Pop Tarts be part of this dish too? And the answer is undoubtedly, Yes!).

But for my dish tonight, I had chicken. I put it in the fridge yesterday. I think. Or close to. Anyways, I needed to make it.

Hmmmm . . . what kind of seasoning do I have in my kitchen?



Pizza and Pasta seasoning! Yummmm!

I was too hungry (read = impatient) to make an actual pizza, despite the fact that I do have mini pizza crusts in my fridge and pasta sauce in the pantry.
Never-the-less.
Seasoning.
What else? Oh yes, Old Faithful as I like to call it!

Now, what to hold it all together with? Egg white? Mayo? I was thinking . . . thinking . . . thinking . . .

But of course! Paul Newman!



Mix all that goodness together


And slap it on the cooker!


Now, as this was cooking, I was thinking to myself- what if it's not gonna be flavorful enough? What if it's bland? (Note to any potential people I will ever cook for in the future- I am notorious for over-flavoring food! I am a horrible judge at flavor and usually end up over-flavoring out of a fear of under-flavoring).

So I rummage about through the fridge until my eyes landed on one of my favorite chicken cooking companions! Wine!

Yes- strawberry wine that I bought in the Hill Tribe Mountains of Thailand. Locally grown, wine'did and bottled. (I'd consider taking orders for a small fee if interested :) ).


I added that puppy right to the sizzlin' chicken tenders and boy did it smell good!! I knew I had made the right decision then and there.

I let them cook a little longer, so as to soak up the wine and then dished 'em out for eating time.


You may be surprised to know, eh-hem, that I decided that they still didn't have enough flavor. And could use a little *sweet* to counter the spicy. So I drizzled just a touch of honey over them and it was the perfect topping!

Now these chicken tenders would have gone Great with some Linguine or some sort of fresh green salad.
But as it is, I ate them plainly by themselves.

Blame it on my upbringing of casserole dishes, meat loafs or even my self diagnosed laziness if you'd like, but I really enjoy just eating one dish. If I have multiple dishes, I mix them and eat them all together.
There is just something so harmonious about 1 single dish containing all your warm and delightful culinary needs.

In the end, I did decide that I needed more carbs for the day and ate a Kavli Crispbread with it, which was quite nice.




In great anticipation, I'm looking forward to another addition of the "Use whatcha got" Food Blog after Jen arrives from America- her suitcases overflowing with American food euphoria! (I know what you're thinking and Yes- I'm referring to Pop Tarts!)
